Some of them are obvious, like speed and stride affect racing, and aggressiveness and bruteness affect fighting. What do the other stats affect and in what way? Loyalty, Smarts, Evilness, and those other ones i see no perpos for, and Fitness? Why are they here and what do they do?
Loyalty is an attribute that determines how loyal your chickens are to you. If their loyalty drops (if you abuse them by exercising them too much, don't feed them, etc), they will run away.
Fitness is an all-around stat that helps in races and fights. I'll likely make it serve more of a purpose in terms of fatigue recovery in the next update.
Smarts is racing stat. A smart chicken knows how to perform more efficiently than a dumb one. :) Quick starts, for example.
Evilness...well...an evil chicken is a tough chicken.

No...the only one that has a dual function is fitness. Don't forget, though, the other factors (happiness, fatness, laziness, and tiredness) affect the chickens' performance as well.

how long does it take to get 100% in everything?
I don't imagine that's possible. The skills improve gradually when you exercise your chickens, but I had to make it in such a way that it would be balanced. If its too easy to make your chicken really good, there would be no challenge.
You'd be surprised how even an average chicken that is extremely well conditioned and taken care of can be better than higher rated chickens. A chicken that's extremely happy, not tired, lazy, or fat can be unstoppable.

Nope. The stats are just as important. A crappy chicken with a good personality will not be as good as an average chicken, and so forth.

If stride, speed and smarts are all associated with racing, then which stat is the most intelligent to raise? Please explain the uses of each stat. :)
They are all of equal weighting, so if you improve a chicken on the treadmill, all of their racing stats will progressively improve. I'm going to tweak it in the next update so that the treadmill and punching bag are more effective.
