So, I'm fighting Mr. Natas, right? And then my health turns white, and stays white no matter what I do.
What do I do?

Well, it fixed itself somewhere between that and going down again, then it broke again, then fixed a few seconds later. Weird.

I think it makes you invincible so... no. :P
Actually, I really think it means you have more than possible health, but I'm not sure.

it goes back when you keep fighting him i think it doesnt mean invincible either

Anyway I think this happens when you take damage rapidly (like when you are getting kicked around by the Boss).

It happened to me too so I just made sure I had a lot of health and kept fighting.
