Why does the big blind go up after a while?

That's how it goes in poker. Blinds raise over time, I've always assumed it was to force the play and up the stakes a bit.

That's exactly why. Otherwise someone can sit there with 2 chips left and just keep folding if he gets a bad hand. The increasing blind forces them out of the game.

I liked the game, but I was disappointed that you only get to try out the one town. Multiplayer would be great also, as denacioust mentioned.
